PUFF PASTRY APPLE TART

This Puff Pastry Apple Tart features a juicy apple filling enriched with sweet apricot jam and is closed into a crispy Puff Pastry dough.
Ready in few minutes, you can customize it with your favourite fresh seasonal fruits, nuts and jams too. Read the tips below where I share with you many filling options!

Ingredients
  

  • 2 large apples about 450 g (1 pound) of whole apples
  • About 1/2 tbsp fresh lemon juice
  • 70 g (1/3 cup) brown sugar
  • 10 g (1 tbsp) cornstarch or all purpose flour
  • 2 g (1/2 tsp) cinnamon powder
  • 1 rectangular puff pastry sheet chilled
  • About 90 g (1/3 cup) apricot jam
  • 1 beaten egg for brushing the top
  • Pearl sugar or granulated/brown/white sugar for topping (optional)

Instructions
 

  • Peel, core apples and cut into small pieces: drizzle with some fresh lemon juice to prevent oxidation.
  • Trasfer them into a large bowl and mix with brown sugar, cornstarch and cinnamon powder until well coated. Set aside.
  • Remove puff pastry from refrigerator just when you need it, so it will stay chilled. Transfer it into a lined baking sheet.
  • Mark a long rectangle into the center of the puff pastry sheet: it should be wide about 1/3 of the puff pastry sheet wide.
  • Make diagonal cuts about 2cm-1inch apart on both the outsides of the rectangle.
  • Discard the 4 corners of the dough.
  • Spread apricot jam into the long rectangle at the center of the dough you marked before.
  • Place the apples on top of apricot jam.
  • Fold the top part of the dough over the filling. Fold the diagonal strips of dough over the filling, alternating sides until all the loaf is well sealed. Gently press the ends and the sides to seal the loaf.
  • Brush the top with beaten egg and sprinkle with pearl sugar.
  • Bake in preheated oven (fan on, upper+lower heat) at 200°C-400°F for about 22 minutes or until golden brown.
  • Remove from the oven and serve it when still slightly warm or when cooled down.

Notes

Store at room temperature for about 2 days.

This recipe is very quick and easy to assemble and you can make it with so many fillings variations! Here I leave you some ideas:

  • Pears and chocolate spread (and why not some chocolate chips?!);
  • Peaches and Amaretti cookie crumbles;
  • Strawberries and chopped pistachios;
  • Berries filling, served warm with some vanilla ice cream on top;
  • Nutella and chopped hazelnuts.

This recipe is very quick because it’s made with ready to go Puff Pastry sheet. But if you don’t want to buy puff pastry, I give you my incredibly quick and easy Pastry Dough recipe:

  • 250 g all purpose flour
  • 80-90 g water
  • 110 g unsalted melted butter
  • 15 g sugar

Place flour, sugar and water into a food processor until combined. In the end slowly add melted butter. Process quickly until get soft crumbs.

Transfer the crumbs onto a work surface, gather the crumbs together without kneading too much the dough: you just need to assemble, do not heat it with your hands too much.

Wrap the dough in plastic wrap and let it set 15 minutes at room temperature (or in refrigerator if you live in a hot climate).

It’s ready to roll it and use it!
