TIRAMISU NUTELLA TRUFFLES
Ingredients
- 250 g (9 oz) Mascarpone cheese chilled
- 160 g (6 oz) Savoiardi biscuits or Ladyfingers biscuits
- 50 g (1/3 cup) powdered sugar
- 20 g (about 3 tbsp) Espresso coffee or instant coffee dissolved into hot water
- Nutella for the filling
- Unsweetened cocoa powder for coating
Instructions
- Make Espresso coffee and cool it down.
- In a big size bowl, soften chilled Mascarpone using a spatula; add powdered sugar and mix until combined.
- Add the cooled Espresso coffee and mix just until combined.
- Put in refrigerator until prepare the cookies mix.
- Place Savoiardi (Ladyfingers cookies) in a food processor and crush until very fine crumbs form.
- Add the finely crushed cookies in the mascarpone mix and mix until combined.
- Put in freezer for 15 minutes.
- Take a small amount of the mixture, roll it with your hands to form about 1inch-3cm ball, slightly flatten, make a hole in the center and add about ½ teaspoon of Nutella in it; close the ball (add some extra cookies mix to close it well) and roll with your hands to form a ball.
- Roll into unsweetened cocoa powder for topping.
- Refrigerate for at least 2 hours before serving.

Tips:
This recipe is incredibly easy, but for a perfect result you should reduce Ladifinger biscuits into a fine powder. I’ve used a food processor, but you can also put your biscuits into a ziplock bag, well close it, then using a rolling pin to crush them into very fine powder.
I suggest to chill the cookie mix before form into truffle balls, mostly if you live in a hot climate. I put my mix into freezer for 15 minutes: easy peasy!
