Moist Eggless Red Velvet Mug Cake with an irresistilble Cream Cheese filling, ready in just 1 minute in Microwave! This is the perfect last minute treat for Valentine's Day or any other occasion.This Mug Cake features all the classic Red Velvet flavors like cocoa, vanilla and Cream Cheese. If you love its traditional flavor, you are going to love this quick effortless version!If you don't have a microwave, you can also bake it in classic oven or an air fryer, you will just need some minutes more. In this case, I suggest to use a ramekin because the most of mugs are not oven-proof.I used a 800W microwave: if you have a Microwave with higher/lower wattage, you have to reduce/increase the cooking time for few seconds; check out the top of the cake that should be dry when the cake is done (you can also check the mug cake with a skewer that would turn out clean).
35 g(2 tbsp+1 tsp)milkroom temperature; you can substitute milk and vinegar with buttermilk
1/8 tspwhite vinegaror lemon juice
35 g(3+1/2 tbsp)all purpose flour
3 g(1 tsp)unsweetened cocoa powder
1/8 tspbaking powder
1/8 tspbaking soda
25 g(2 tbsp)caster sugaror granulated white sugar
1/4 tspvanilla pasteor vanilla extract
12 g(1 tbsp)vegetable oilflavorless like sunflower oil, canola oil...
Red food coloring paste
Cream Cheese Filling
15 g(1 tbsp)cream cheeselike Philadelphia
6 g(1 tsp)powdered sugar
Instructions
In a very small bowl, mix together milk, with vinegar, stir and set aside for about 10-15 minutes.
In a very small bowl prepare Cream Cheese Filling: mix cream cheese with powdered sugar and set aside.
In a mug (250 ml - 1 cup) mix together flour, sugar, cocoa, baking powder, baking soda.
Add milk mix, vanilla, oil, red food coloring and mix until smooth.
Add Cream Cheese Filling and cover it with some mug-cake batter.
Cook in Microwave for 1 minute and 15 seconds.
Cool down slightly before serve it.
You can sprinkle some powdered sugar on top (optional).

Notes
I've used a Microwave 800 Watt power. If you have a Microwave with higher/lower wattage, you have to reduce/increase the cooking time for few seconds. The cake is ready when the top is dry.You can store leftover mug cake at room temperature covered with plastic wrap for 1 day; in refrigerator for about 3 days. Bring at room temperature before serve it.
