If you are looking for a new quick recipe to treat yourself, you're in the right place!Almost everybody know French Toasts: also called "Pain Perdu" (lost bread), it's usually made with old bread slices soaked into an egg mixture, slightly fried in a pan and topped with sweetener as honey, jam, maple syrup...This decadent Almond French Toast is thought for the almond lovers as I am: a thick brioche bread slice stuffed with an homemade Almond Paste, soaked into a slightly sweet milk-egg mix and coated into sliced amonds: that's pure heaven!The Almond Paste is creamy and full of almond flavor (if you like marzipan, you will fall in love with it!) and the sliced almond coating gives a slightly toasted crispy crust.Perfect for a decadent Breakfast, Brunch or just a treat in every moment of the day!
20 g(4 tbsp)almond flouryou can make it by grinding peeled almonds very finely
25 g(2 tbsp)brown sugar
30 g(2 tbsp)unsalted buttermelted
15 g(1 tbsp)almond milkyou can substitute it with any type of milk you like
Few drops of almond extract
French Toast
2thick brioche bread slicesbetter if your brioche bread is old and slightly dry.
1eggroom temperature
6 g(1/2 tbsp)brown sugar
60 ml(1/4 cup)milkroom temperature
1/2 tspvanilla extract
About 2 tbsp of sliced almonds
1/2 tbspunsalted butterfor the pan (optional if you use a non-stick pan)
Powdered sugar for topping
Instructions
Almond Paste Filling
Mix together all the ingredients until well combined and get an almond paste.
Place into a piping bag and set aside.
French Toast
In a medium size bowl mix the egg, milk, brown sugar, vanilla until combined. Set aside
Using a small serrated knife, cut a pocket at the bottom of every brioche bread slice, drive the blade about 70% into the bread and be careful to not completely cut the slice through.
Fill the pocket with the Almond Paste. Set aside.
Heat over medium heat a non stick pan with 1/2 tbsp of butter for few minutes.
Slightly dip the stuffed French Toast into the egg mix and drain the excess, then coat one side with sliced almonds.
Low the heat to medium-low and cook every side of the french toast until golden brown (about 3-4 minutes).
Remove from the pan and serve immediately sprinkled with powdered sugar on top.
