20 g(about 3 tbsp)Espresso coffeeor instant coffee dissolved into hot water
Nutellafor the filling
Unsweetened cocoa powderfor coating
Instructions
Make Espresso coffee and cool it down.
In a big size bowl, soften chilled Mascarpone using a spatula; add powdered sugar and mix until combined.
Add the cooled Espresso coffee and mix just until combined.
Put in refrigerator until prepare the cookies mix.
Place Savoiardi (Ladyfingers cookies) in a food processor and crush until very fine crumbs form.
Add the finely crushed cookies in the mascarpone mix and mix until combined.
Put in freezer for 15 minutes.
Take a small amount of the mixture, roll it with your hands to form about 1inch-3cm ball, slightly flatten, make a hole in the center and add about ½ teaspoon of Nutella in it; close the ball (add some extra cookies mix to close it well) and roll with your hands to form a ball.
Roll into unsweetened cocoa powder for topping.
Refrigerate for at least 2 hours before serving.

You can prepare the truffles days before, store in plastic box in refrigerator for days and remove from the fridge 10-15 minutes before serving.Store in refrigerator for about 1 week.
